Wonderful aromas of green apple and citrus mineral notes make for a delightful start to the day. The Brut NV offers bright, crisp acidity complemented by a touch of yeast on the delightfully long finish. A classic house style!
This is essentially a Champagne from NEW MEXICO. The owners of Gruet actually own a vineyard in New Mexico and wanted to find land in the US that was similar to the Champagne region. Lo and behold, you get a wine that is made in the method champenoise (Champagne Method) by winemakers from the region.
The racing acidity with the minerality will complement the bruschetta well. Also, who doesn't love bubbles to start a meal?

Salad Course
Wine Pairing: Bosman Generation 8 Chenin Blanc
South Africa
The Generation 8 Chenin Blanc is an anytime wine, an absolute crowd-pleaser and one to be enjoyed regularly.
Typically known for bright fruity flavors of pear, apple, peach, melon, and high acidity. That acidity and aromatic kick will make for a great salad pairing. South Africa is typically a little more aromatic and that should help complement this course well!

Germany
100% Pinot Noir grown organically in limestone. This delightful rosé is light in color with lip-smacking freshness and spicy fruit.
This is a perfect outdoor summer wine. Especially if you're pairing it with a veggie lasagne. You'll get some tart & ripe raspberry, wet leaves, stony minerality, with some spice, & a funky fresh vibe.
This wine blew my socks off. Actually, I was wearing flip-flops at the time, but you get the picture! This really is such a fine & delicious wine from Germany

Baked Fish Course
Wine Pairing: Klein Constantia Chardonnay
South Africa
Bright and rich in colour. The nose is abundant with aromas of butterscotch, marzipan and dried apples. The palate is fresh and vibrant with a good backbone of acidity, balanced by creamy textures. Full bodied and round, the wine concludes with a crisp, complex and lingering finish.
This is a great fish wine for all the reasons above. Many people in the US think Chardonnays are just butter bombs. Well this obviously isn't from the US, but this shows how complex and beautiful this wine can be. Not only is it great with food, but it can stand on it's own.

Overall, a record-breaking and outstanding vintage, ripe, rich, and balanced.
Pale gold colour with delicate citrus and spicy aromas. Light and refreshing on the palate with hints of white peach and honey. It has an excellent acid balance, a smooth, silky texture and a clean, long, crisp finish.
When you are looking for dessert pairings, you need to find a wine sweeter than it's dessert. Otherwise, the wine won't seem to enhance the food. The citrus and honey will make for an incredible complement to the tiramisu.
Delicious on its own, as an aperitif, or really with any dessert.
Serve cool.
